Glimpsing at the recipes I've posted so far, I've realized that zucchini are one of the ingredients I've used the most. I've stuffed them with different mixtures, baked a few kinds of muffins, pizza, cooked some stews, even a purée... Today, I decided to share with you this easy-to-make stir-fry recipe, which can also be called a stew... It doesn't really matter what it is... What counts is its inviting aroma, refreshing flavor and creamy texture, and all of that for quite a low price! Grab just a couple of ingredients, and your lunch will be ready in less than 30 minutes!
It looks a lot like the Summer Stew, but it's flavor is pretty different. And this is what you'll need:

- Peel zucchini if you prefer. Remove the seeds using a small spoon. Dice the flesh.
Peel and finely chop tomatoes. Do not discard the seeds! - Put oil into a deep pan and heat it over medium fire. Add zucchini and a pinch of salt and cook until tender, stirring often.
Alter the taste with some more salt and spices if you wish, then remove from fire.
