Directions:
- First, prepare the zucchini. Peel it, remove the seeds (if any), and grate it. Sprinkle with 1/2 teaspoon of salt and put into a colander with a dish underneath. Leave it for 10-15 minutes, and then using your hands, squeeze out as much liquid as possible.
Note that you'll need 300 g of squeezed zucchini, which is approx. 500 g before draining. - Meanwhile, bring some water to boiling, add some salt and rice and cook it until soft and tender. Drain well and let it cool a bit.
- In a bowl combine sour cream and oil. Add sesame seeds and curry powder. Then, stir in zucchini, rice and chopped deli meat.
Combine flour and baking powder and gradually add it into the rice mixture. At the end, add some pepper and some more salt, to taste.
You'll get a thick and sticky batter-like mixture...
Bake into a preheated oven at 200°C for approx. 35 minutes.
Of course, you can make a regular pie and cut it into bars later.
Serve cooled, topped with sour cream or mayo.
