Though it's called "stew", it's actually something in between a stew and a stir-fry. Regardless of the name, it's a must-try recipe as you'll need only 2 or 3 ingredients, and within a few minutes you'll get a delicious, light summer lunch. And you'll get it for a song! And you'll need the following:

- Dice the peppers. I prefer using wax peppers for this dish, but bell peppers are also fine.
Peel the tomatoes and cut them into small pieces. Make sure tomatoes are ripe and soft. - Put oil into a deep pan and add peppers. Start heating it over medium fire and cook stirring occasionally, until peppers are half done. Stir in tomatoes and reduce the fire to low. Let it cook for 10-15 minutes, stirring occasionally, until tomatoes start turning into mush, liquid is reduced and the stew starts thickening.
Season it with some salt to taste at this point.
The version one is done!
Serve warm, with some bread and white cheese, sour cream or yogurt.
p.s. It's the best when you just dip each piece of bread into the stew instead of eating it with a fork... ;)
