- Peel the potatoes and cut them into halves or quarters and then into thin slices.
Peel the zucchinis and remove the seeds, if any. Then cut them into thin slices as well. - Heat oil into a deep pot over high fire and add potatoes. Cook them for a couple of minutes, stirring often, until they get a thin crust. Then add zucchinis and combine. Add some salt and cook for an additional couple of minutes.
- Pour in some water, just enough to cover the ingredients. Once it comes to a boil, reduce the heat to low and let the vegetables simmer by stirring occasionally to rub the ingredients from the bottom of the pan. This will give the dish an extra deliciousness.
- Once the vegetables have turned into lumpy mash and the liquid has almost entirely evaporated, remove the pan from fire. Doctor the taste with a dash of pepper and some more salt, if necessary.
Note that vegetables will become soft quite fast, but the longer you cook them, the smoother the mash will be.
