- 3 medium-sized zucchinis
- 2 onions (medium-sized)
- 2 carrots (medium-sized)
- 300 g minced meat (of your choice)
- 3 tomatoes (medium-sized)
- 1 tablespoon dried parsley
- 1/2 teaspoon dried mint
- to taste salt, pepper
- 150 g potatoes (peeled)
- 1 tablespoon butter
- some milk
- 100 g yellow cheese
Directions:
1. Prepare the vegetables first: mince the onion; slice one carrot and grate the other one; peel and finely chop the tomatoes; peel the zucchinis, cut them in half lengthwise and scoop them out using a spoon, leaving app. 1 cm thick "walls" and bottom. Mince the zucchini flesh. This time I used one extra large jumbo-sized zucchini... :)
3. When meat is cooked, add tomatoes, zucchini flesh, salt and pepper and cook until all the liquid vapors. Add parsley and mint and some garlic powder if you like its taste. Mix and remove from fire.
6. Pour about 200 ml hot water into the pan, cover it and bake into a preheated oven at 250°C for about 30 minutes, until zucchinis become soft and tender. Remove the lid (or the foil you used for covering the pan) and put some grated yellow cheese on each "boat". Bake for additional few minutes.
