Mushrooms have always been an important nourishment. Their earthy and meaty flavor makes them a popular substitute for meat (in vegan and other diets, or in general), and the fact that they are quite inexpensive and easily available adds up to their popularity.
I know many people that go mushroom hunting or grow mushrooms by themselves, but I have never done either. Growing asks for particular growing conditions and attention, and gathering mushrooms asks for lots of know-how about identifying them. 'Cause you know, all mushrooms are edible, but some only once!
So far I have posted only recipes that call for button mushrooms, but I will try to use some other sorts in future. Note that recipes below are sorted by course type, and at the end of this post you'll find some recipes in which mushrooms are an optional ingredient. Hope you'll enjoy!

First, you have this filo pie with potato-based filling enriched with mushrooms, of course. With changing (or even omitting) one of the ingredients, you can turn this pie from meaty into hearty vegan meal. It is also suitable for Orthodox fasting days. And when you add the well-known pleasantly bitter flavor of beer, you know you've got the right thing!
Then, you have another filo pie. This one is vegetarian sustainable, and one of my favorite, if I may say. :) The popular, perfect combination of spinach and cheese is now taken to a new level with some mushroom and curry bites...

The one on the left is with filo pastry, filled with chicken, cheese and tomato cream, and of course mushrooms. Its loaded with filling, so it would be the right choice if you prefer creamy pies over "bready" ones.
The one on the right uses puff pastry and rich cheesy cream along with the soft chicken and mushroom bites.
First, some crepes stuffed with ground meat and covered with dairy foamy cream, that are so easy to prepare and look so classy. Mushrooms are cited as optional here, but they will certainly enhance the flavor of this meal even more.
And then, it's her Majesty - the Pizza! I mean, mushrooms and pizza is a love for life, and that is not an issue or news at all, but you can maybe try some new spicy combination described here!
The first two photos below show two different versions of what is basically a potato salad and a classic meal salad.
The first one is simpler, with 4 ingredients only, but with an unusual roasted flavor. Essentially, it's a vegetarian and gluten-free recipe, but it can be easily adjusted to fit into vegan sustainable diet.
The second one is a Mediterranean-style recipe with lots of veggies and herbs whose aroma you'll enjoy, for sure! The label "vegetarian that can be easily turned vegan" applies here as well.
The one on the left is a rich and hearty combination of deli meat, few kinds of cheese and vegetables, while the one on the right is made of rice and vegetables "wrapped" into refreshing sour cream.
This hearty rustic-style pork stew with mushrooms and vegetables, authentically baked in earthenware pots, will certainly please all your senses. Just give it a try!

Let's now turn to classic main dishes. I don't know why, but the first thing that comes to my mind when I hear "homemade lunch" is some nice, warm, grandma-style stew. I guess I feel nostalgic about her cooking... Well, here are a couple of proven recipes for this kind of stew! :) |
