These are the ingredients you'll need to prepare one big roll that makes approx. 4 servings:
- 7 filo sheets
- 250 g chicken breast
- 2 medium-sized onions
- 250 g fresh button mushrooms
- 3 tablespoons sour cream
- 3 tablespoons tomato sauce or ketchup
- 200 g hard white (brined) cheese
- 1 egg
- 5 tablespoons oil (divided)
- 50 ml sparkling water
- to taste salt, pepper and parsley
Directions:
- The pie has several different fillings, so start preparing them one by one. Firstly, prepare the chicken. Bring some water to boiling and cook chicken breast by adding nothing else but some salt and pepper. Drain and chop it finely. Set aside.
- Put 2 Tbsp oil into a pan and heat it. Add finely chopped onions and cook stirring often, until soft and translucent. Add sliced mushrooms and continue cooking until all the liquid they release vapors. Add some parsley to taste, combine and remove from fire. Set aside to cool a bit.
3. Beat egg using a fork or a whisk and add grated or crumbled cheese. Combine until homogenized. You can use feta cheese instead of hard white cheese.
4. Combine sparkling water and the remaining 3 Tbsp of oil. So, now when you have prepared all the fillings, it's time to roll up! |

5. Put a piece of parchment paper or a foil onto the work surface so that you can roll up the sheets more easily later, and start layering the pie this way:
- 1st filo sheet - brush with 1/4 of the water-oil mixture;
- 2nd filo sheet - brush with another 1/4 of the water-oil mixture;
- 3rd filo sheet - sprinkle with half of the mushroom filling;
- 4th filo sheet - brush with 1/4 of the water-oil mixture and sprinkle with chopped chicken;
- 5th filo sheet - brush with the last 1/4 of the water-oil mixture and spread tomato sauce;
- 6th filo sheet - spread sour cream;
- 7th filo sheet - spread the egg mixture and sprinkle with the remaining mushroom filling.

8. Let the pie cool for a few minutes before cutting into pieces.
Serve warm with some yogurt or kefir.
