I got the recipe from a friend, and she has written it down as Turkish Butter Cookies. I'm not really sure why they were called so, as I couldn't find some connection between those and any Turkish cookies, but one thing is sure - they taste great!
The most interesting thing about this recipe for me was the fact that the original recipe calls for margarine, not for butter, despite they are called Butter Cookies. Funny and odd, but true. So, you have a delicious and proven vegan-sustainable recipe for amazingly delicious "butter" cookies.
So far, I have made them with two "basic" flavorings - vanilla and chocolate. The vanilla-flavored are beyond words, and I really think there's no need to say anything else. The chocolate-flavored, which, surprisingly enough, I liked more, remind me of the many people's favorite Oreo biscuit. How good is that? On a scale from 1 to 10, that would be 50. At least! However, you have the ingredients for the basic dough, and you can add any flavoring you like to make your favorite butter cookies.
Before I proceed to the ingredients list, I just want to point up that the recipe is very generous - you will get 50-70 pieces out of those ingredients, depending on the size of the cookies. Definitely a go-to recipe for parties and holidays!
And you'll need the following:

- In a bowl, combine flour, cornstarch and powdered sugar. Also, add cocoa powder, if using any.
- Add cold margarine cut into several slices and the liquid flavorings, if using any. Knead for a few minutes, until you get a smooth dough that won't stick to the bowl or to your hands.
At first, you will get a grainy, sandy mixture that will look impossible to turn into dough, but don't worry, it will be perfect. And by the time dough is done, margarine will melt just enough to make the dough ready for shaping without having to keep it in the fridge or wait for hours.
4. Gently press each cookie with a fork to make a decorative pattern. This is an optional step, but will make the cookies look prettier.
5. Put the cookies onto a baking tray covered with parchment paper or silicon tray liner. You don't have to leave too much space between them as they will grow just a little.
Bake into a preheated oven at 180°C for 20-25 minutes, or until they start getting light brownish color.
They can stay fresh for up to 10 days.
