After the "confusing" Boiled Egg Cookies i posted few days ago, I'm sharing with you another incredibly decorative and delicious no-bake cookies. My dear friends, please, let me introduce the Watermelon Cookies! :)
Therefore, she decided to invent a new watermelon cookie recipe for me and it turned absolutely fabulous! Thank you, mom!!!
Just for your information, the cookies at the birthday party were made from semolina flour, water and some flavor extracts, but the taste was too "waterish"... I can't really describe it to you... In her new recipe, my mum included coconut - one of my favorite sweets ingredient, and there was no chance to miss. :)
I'm now sharing with you my mom's recipe, but this time made by me :)

For the basic mixture:

Directions:
1. First prepare the basic mixture for the cookies: beat butter and sugar until fluffy. Add coconut and minced biscuits and knead the mixture with your hands until homogenized. Divide it into 2/3 and 1/3 parts.
2. Add strawberry juice to the 2/3 part and mix. Add some red coloring as well. Add as much as you want your watermelons to be ripe :) Set aside 4-5 tablespoons of this mixture and add the chocolate sprinkles to the rest of it.
3. Add orange juice and some green coloring to the 1/3 part of the basic mixture and combine.
4. So now when you have 3 different mixtures (green, pink and pink with chocolate sprinkles), you can proceed with giving the cookies their watermelon shape.
5. First take the pink mixture and make cherry-sized balls. This will be the watermelon's interior flesh.
6. Second, take the pink mixture with chocolate sprinkles (which are supposed to play the seeds) and divide into so many parts as you have cherry-sized balls. Wrap each ball. See the photo below...
If you want, you can skip the division in step 2 and add chocolate sprinkles into the whole pink mixture. It would still look very nice.
7. Now you should wrap each pink ball with the green mixture, to give your watermelons a rind :) Take a look at the photo below to see how it should look like... |

You can substitute butter with margarine and butter cookies with any vegan shortbread cookies for the vegan version of this recipe.
