The recipe is kinda non-standard because of the sauce, and the time needed to make it. While you can make a bunch of regular tomato sauce ahead and use it whenever you need, the things are not so easy with this sauce here. It's the best when freshly made, at least in my opinion. It's a dairy sauce, so I'm not sure how long it would last if sealed in jars and kept in the fridge. Perhaps it can be frozen, but I couldn't guarantee it before I try...
This is not the first time I post some recipe with unconventional pizza sauce. In fact, now when I take a look at the recipes I've shared so far, most of them don't have the classic tomato sauce. You can try the juicy Zucchini Pizza, the colorful Mayo Salad Pizza, or this Cheesy Pizza, all of them using simple sour cream instead of sauce. If you want to try something even more unusual, I bet you'll like the Borscht Pizza with beetroot sauce. And you know what? There are many more to come soon!
But let's now get back to the Spinach Pizza and see what you'll need to make one medium-sized (35 cm) round pizza...

- If using fresh spinach, cook it until wilted, then chop it finely. If using frozen one, simply defrost it.
- Now, prepare the sauce. Melt butter into a small pot and add flour. Fry for a minute or two, stirring very often, until flour starts getting light brownish color. Then, whisk in milk and cook for additional minute, or until it comes to boiling. Remove from fire and stir in Parmesan and spinach. Season with salt and some pepper and your sauce is ready!
- Roll out the dough and bake it at 200°C for a minute or two, just until it gets a very thin and gentle crust.
For the pizza you see on those photos, I used a store-bought pizza dough which is already baked this way, so I just skipped this step.
