At first glance, those may look like the Boiled Eggs I posted a while ago. As a matter of fact, both recipes are using similar ingredients and have coconut as the main star, but the texture is different. Those are kind of crispy and chunky, while the Boiled Eggs have some hidden creamy "background".
As for the shape, you have two options. You can make small truffles that will play cute little snowballs, or you can make bigger truffles and then cut them into slices or halves before serving. It's up to you.

- Put water, sugar and vanilla extract into a pot and hit it over medium fire until boiling. Then, add semolina, stir well and cook for 2 more minutes, stirring constantly.
If you want, you can put a piece of jello inside each snowball (or a whole cube for the big ones). This will make a nice colorful surprise inside. If you don't like jello, you can use some nuts instead.
Also optionally, you can roll each snowball into desiccated coconut to infuse them with even stronger coconut flavor.
