1. Prepare the filling first. Put butter and sugar into a small pot and melt them over low heat. Add sour cream and mix using a whisk until homogenized. Remove from fire, add coconut flour and combine.

2. Divide the filling into 4 equal parts. Lay down one wafer sheet with the big squares up and spread the first quarter of the filling. Cover with the second sheet, again with the big squares up, and spread the second part of the filling. Repeat the same procedure with the next two wafer sheets and the last two quarters of the filling. Finish with the last, fifth wafer sheet, this time by placing it with the small squares up. Note that the filling should be warm so that wafer sheets get softened quickly.
