Dear friends, let me take you to the Orient!
Known also by the names rahat lokum and turkish delight, the lokum is a confection which is very popular in the Middle East countries and in countries that were once under the Ottoman rule. It can be found also in countries with great Middle Eastern and Balkan diaspora.
Lokum is made of starch and sugar and has a jelly structure. It has a huge variety of tastes and aromas. Rosewater, walnut and lemon are the most common, but you can also try orange, cinnamon, coconut, pistachios, dates... It's sold into small cubes, usually dusted with powdered sugar, but sometimes covered with milk chocolate.
Its preparation seems easy, but in fact it's very complicated and not everyone can do it. It takes years to learn the craft and become skillful in making lokum. However, there is an industrial production of this confection as well, but the same rule applies to any food product: craft-made is better than industrial!

Directions:
- Put lokum, powdered sugar, 250 g coconut, and lemon juice into a bowl and knead the mixture with your hands until fully combined. You'll get a dough consistency mixture. You can add some food coloring along with the other ingredients if you want to dye the cookies. I prefer them white as they are naturally.
- Form truffles and roll them into coconut flour. Keep them in a plastic box at room temperature.
