As I said in the Filo Pastry info text, you can use literally anything for the filling - savoury or sweet, succulent or dry, chopped, ground, sliced, mixed, layered... There are thousands of combinations!
When it comes to savoury filo pies, fillings with cheese are classics, something that everyone would rather choose. I also love those containing vegetables, especially spinach and leeks. But once in a blue moon, I decide to try some combos with ingredients I wouldn't really eat plain. This time, it's greaves. I spoke about greaves in this post here, and shared few delicious recipes with greaves as one of the main ingredients, but this one was fabulous! We all liked it so much that I was sorry I made just a couple of pieces for "tasting".
Preparation is easy and no time-consuming, so you should definitely try it once you pick up some filo pastry and greaves (the rest is only some staples)!
I will list here the ingredients you'll need for one roulade, which makes one main meal serving...

- Whisk the egg, then stir in sour cream. Add baking powder, salt and pepper, and at the end add the greaves. You will get a creamy and quite thick mixture. This is the filling for the pie.
- In a separate bowl combine oil and sparkling water.
- Now, layer three filo sheets on the top of each other, and brush each one of them with the oil-water mixture. You should use approx. 1/4 of the mixture per sheet, and therefore have 1/4 left.
- Put the last, fourth sheet on the top and spread the filling over it, leaving about 2cm on the edges.
- Fold and then roll the sheets as shown in the photos below. Those photos are from another recipe but you can clearly see how to do it...
You can also simply roll the sheets without the folding part, but this will keep the filling all inside the roulade and will make the pie juicier and more succulent.
Note: You can also make some single-serving roulades, if you need to serve this pie at a party, for example, or if you simply prefer it that way. All you need to do is to cut the sheets into 4 or 6 squares, depending on how big you want the roulades. The most efficient way is to do this after you spread the filling (step 4). Then, fold and roll each square as shown in step 5.

Bake into a preheated oven at 200°C for approx. 15 minutes, or until golden brown on the top.
You can serve it plain, or along with some sour cream or yogurt.
