In nothing more than 15 minutes, you'll get a hearty breakfast or lunch, full with flavors and aromas. Its creamy texture and its slightly sourish, refreshing taste will win you even if you're not very keen on meat!
And this is what you'll need:

- Finely chop the onions. Chop the greaves. Dice the peppers. Whisk the eggs with a pinch of salt.
- Heat oil or lard into a deep pan and add onions. Cook them over medium fire until soft and tender. Then add greaves, stir for a few seconds and pour in 150 ml of water. Let them cook for a couple of minutes.
- When all of the water has evaporated, stir in peppers. Pickled peppers are already softened in some way, so they won't need much time to cook - 2 minutes will be just enough. Season with some pepper and salt if necessary, but be careful as both greaves and peppers are already salted. Then add whisked eggs and cook, stirring often, until eggs are done.
Serve immediately, with some bread and some sour cream or yogurt that will give another fresh note to this combo.
