Though there's "spinach" in the name, its taste is not so dominant here, so even those who aren't really keen on spinach will like this recipe a lot. My hubby is a proof! :) However, I was skeptical at the beginning, so I decided to make just half the dose. But once we tried them, the thought just crossed my mind that I should have doubled it! They were so soft, moisture, and smelled so heavenly good, you just couldn't stop eating! And not to mention that lusty rich flavor! Creamy cocktail of corn and cheese, seasoned with fresh spinach and enhanced with crispy greaves... How can that be bad? :)
Here's what you'll need to make
approx. 20 standard muffins:

- Beat eggs until fluffy. Add salt, milk and oil. Then, stir in crushed cheese.
- In a separate bowl, combine flour, cornmeal and baking powder. Gradually add it into the eggs mixture and stir until homogenized.

4. Separate the mixture between lightly greased and floured muffin molds. There's no need for this is using silicone molds. Sprinkle each muffin with some garlic powder or pepper flakes to taste, if desired.
Bake into a preheated oven at 200°C for approx. 25 minutes, or until a toothpick inserted comes out clean. |
