Each family has its own favorite chicken salad. This one is our number one. Actually, one of the two that are constantly fighting to get to the throne. As i said, the recipe is very generous and this salad is absolutely fantastic! Besides the everybody's favorite chicken, it also has some mushrooms and few kinds of veggies, which makes it a full meal. You can serve it as appetizer or enrich your take away sandwich!
When it comes to creamy salad, I like when they are thick (but not dry, though), and it is the case with this one too. It is so thick you can use an ice cream scoop or some mold to make different shapes when serving it without fearing it will fall apart after awhile. If you need other thick creamy salad recipes, you can check out the one with olives, or the one with mesmerizing orange color, or the cheesy leeks one. Now, back to the chicken salad from today: if you prefer your salad to be more "runny", you can of course add some more of the creamy ingredients (see step 3).
And those are the ingredients you will need:
- 2 cups chicken breasts (cooked and finely diced)
- 1 cup potatoes (boiled and grated)
- 1 cup pickles (grated)
- 2/3 cup carrots (boiled and grated)
- 2/3 cup button mushrooms (canned or cooked, finely chopped)
- 3 tablespoons mayonnaise
- 2 tablespoons sour cream
- βto taste salt and pepper

3. Now, add mayo and sour cream and combine once again. If you want the salad to be a bit thinner, add some more mayo and cream, but keep the ratio: add 1 tablespoon of mayo and 1/2 tablespoon of sour cream at a time.
Creamy salad with sour cream tend to become too runny and ugly-looking after awhile as sour cream gradually releases some liquid, but don't worry - it won't be the case with this one! Both chicken and potatoes can absorb quite a great amount of liquid, therefore, this salad will never become too runny even if it spends a few hours on the table.

You can serve it an an appetizer with some nice bread, as canape spread for parties or as filling and delicious sandwich spread with a few lettuce leaves, for example.
