The robust and sharp zest of olives is skillfully wrapped together with other milder, but yet recognizable flavors, forming a pleasant and unforgettable "package". It's crispy and so creamy in the same time, so I'm sure you'll all enjoy it. You can serve it as a creamy salad, or use it as sandwich or canapé spread. Its simple preparation and the relatively inexpensive ingredients make it available for the everyday menu, but on the other hand, it looks fancy and elegant enough to be part of special occasion dinner parties. How awesome is that?
I saw this recipe on a famous cooking TV-show, but it was significantly different from the one I will share with you here, both for the ingredients ratio and for its texture. The original was much thicker and with more chunks, intended as salad, and I decided to modify the recipe in order to get a softer and creamier mixture that will be more as a spread.
It is worth mentioning that this spread can be custom-colored depending on the choice of olives and bell peppers (which are also one of the key ingredients). This time I made it all green, but you can play with colors using black olives and traffic-light plus orange bell peppers.

- Chop olives, bell pepper and walnuts to preferred size.
- Combine butter and cream cheese using a hand mixer, until you get a creamy and homogenized mixture.
As I said at the beginning, this Olive Spread can be served as appetizer (canapé spread or creamy salad) or as perfectly delicious and nutritive sandwich spread for breakfast or lunch.
The mixture you'll get can be served in small bowls, or you can give it a fancy touch by simply shaping balls with an ice cream scoop.
