Well, this was my first time using it, and I know it won't be my last!
Pomegranates are not on my list of favorite fresh fruits. But I do love pomegranate juice. I adore it! And I adore those muffins as well! Those are some of the most distinctive and most unusual sweet muffins I have ever tried! They are not only incredibly delicious and aromatic, but also amazingly soft and succulent, even after a few days.
If you are after vegan recipes, this could become one of your favorite. Plus, the batter is ready in 5 minutes, and you won't need a hand mixer. Isn't it great? You just have to give them a try!
And you will need the following ingredients to make 12 medium muffins:

- Combine sugar, flour, cocoa and baking powder into a bowl. Add juice and oil and mix all together using a whisk or a spoon. You will get a smooth and quite liquid batter.
- At the end, stir in the pomegranate arils, if using any. Note that the muffins get a quite noticeable pomegranate flavor from the juice, but if you want to enhance it even more, add some arils as well. They will also add some crunchiness to the otherwise smooth texture. I didn't use any this time.
- Divide the batter between muffin molds, lightly greased or lined with paper cups. Fill them almost to the top. There is no need for greasing if you are using silicone bakeware.
Of course, you can use any cake pan instead.
Let them cool completely before serving.
