Directions:
1. Cook or bake the pumpkin first. Then let it cool completely. Add milk and mush the pumpkin using a potato masher or a blender to get a smooth and creamy purée.

2. Combine flour, salt, cinnamon and baking soda in a bowl.
3. Beat the eggs with the sugar using a hand mixer until sugar melts completely and the mixture becomes thick and pale yellow. Add honey, oil and pumpkin purée and mix again until homogenized. 4. Reduce the hand mixer speed to the lowest. Gradually add the flour mixture and combine. 5. At the end, add chopped walnuts and finely chopped chocolate and combine using a spoon. |
Note that you can change the amount of sugar and honey added depending on how sweet is the pumpkin. The one I used this time was not sweet at all, I mean AT ALL, so with 200g of sugar anf 1 Tbsp honey I got the right sweetness to my taste (medium-sweet, I guess :) ). You can add more or less, as you wish. You can even totally exclude sugar and add honey only.
