Once it starts boiling, cover the pot and reduce the fire to the lowest. Simmer until beans and chickpeas are soft and tender. This will take nearly two hours, but check the tenderness from time to time, as beans should remain whole and not fall apart.
4. When beans and chickpeas are done, add the celery leaves, season the soup with some salt and pepper to taste and remove from fire.
