By changing one of the ingredients, you can switch between vegan and vegetarian recipe, depending on your preferences. Additionally, you can use different kinds of seeds and get different flavors. So, let's begin!
You will need the following to make 18-20 muffins:

- In a bowl, combine both kinds of flour, baking powder, all seeds, peanuts and seasonings.
If you want, you can use any other kind of nuts. - In a separate bowl, combine the liquid ingredients. Then add them into the bowl with flour and stir well until homogenized. You will get a thick batter.
- Divide the batter between lightly greased and floured muffin molds. No need for this if you're using silicone molds.
- Bake into a preheated oven at 200°C for approximately 15 minutes, or until a toothpick inserted comes out clean.
- As I said, you can bake a loaf instead, if you prefer it that way. In this case, baking will last a bit longer, about 25 minutes (do the toothpick test here as well).
Store at room temperature, sealed in a bag or box to keep them soft. They can stay fresh for a couple of days.
