Its preparation is simple as it can be, though it may be just a bit longer than usual, but the good thing is it's a very generous recipe and it can last for a few days. Also, it's not too sweetened as it relies on the natural sweetness of wheat. This pudding is suitable for parties as well, as it can be served in small few-bites cups and decorated with some fruit or chocolate that will make it look fancy, expensive and attractive.
- 1 cup wheat berries (dry)
- 1/2 cup ground walnuts
- 3 tablespoons sugar
- vanilla extract (optional)

3. Now, put grains, walnuts and sugar into a blender. Also, pour in 1 1/2 cup of the water grains cooked in. Pulse the ingredients until they 'bond' and you get a completely smooth cream. If you want, you can stop the blender a few seconds earlier to get a chunky mixture instead.
Divide the pudding into small bowls or cups, and serve it warm or cooled, as you like. You can decorate and enrich it with some whipped cream, fruits, chocolate, honey... Once cooled, keep it in the fridge for up to 4-5 days. There's no need to seal the serving cups. Enjoy and bon appétit! |
