Though usually made of vegetables only, this stew can also contain meat, rice, or even pasta. Any of these additional ingredients will make it a complete dish itself.
And these are the ingredients you'll need:
- 1 large onion
- 2-3 garlic cloves
- 2 medium-sized potatoes
- 2 carrots
- 1 bell pepper OR 3 wax peppers
- 200 g cabbage
- 200 g cauliflower
- 1 small zucchini
- 1 small eggplant
- 200 g peas
- 100 g corn
- 2 large tomatoes (preferably ripe)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried mint
- 1 tablespoon dried parsley
- 1 teaspoon sweet paprika
- to taste salt and pepper
- 50 ml oil
and (choose one, max. two, or none):
- 300 g meat (any kind) or bacon (optional)
- 200 g rice (raw, optional)
- 250 g pasta (raw, any kind, optional)
- First of all, of course, do the chopping. Finely chop onion and garlic. Peel and dice potatoes. Also, dice bell pepper and cabbage. Peel and slice zucchini and eggplant. Also, slice carrots. Cut cauliflower into florets. Peel and finely chop tomatoes.
Cut meat into bite-sized pieces, if using any. - Now, put oil into a deep pot and heat it over medium fire. Add onions and cook until soft and tender.
If you're using meat or bacon, add it at this point and cook until it gets a thin crust.
Then, add garlic, carrots, potatoes and peppers. Cook for 2-3 minutes, stirring often.
Now, stir in the rest of the vegetables, add all the spices listed and some salt and pepper to taste. If you've decided to use rice or pasta, you can add it at this point as well. Cook all together for a minute and remove from fire.
3. Pour the mixture into a suitable baking pan, and pour in 100 ml of hot water if making the veggie-only or veggie-meat version, or 200 ml for the rice and pasta version. Cover the pan with a lid or seal with an aluminum foil and bake into a preheated oven at 200°C for approx 30 minutes, until all the ingredients become soft and tender. Remove the lid before the last 5 minutes, so that the stew can get browned a bit.

Serve warm, with your favorite bread. And if you can't get enough of vegetables, you can serve some fresh salad with it: you can choose some of those here, or make a simple cucumber salad seasoned with salt, oil and vinegar only.
White cheese, sour cream, yogurt and deli meat are also a great condiment to this stew, especially to the meatless versions. Enjoy and bon appétit! |
