This recipe has been in my cookbook like since forever, and I was always skipping it for some reason. Today I was out of tuna, then my tomatoes were too ripe, the next time I was craving for some other food... and thee recipe was sitting there patiently, waiting to be tried...

So, it's time to try it!
It's a dish that abounds with colors, and brings so many flavors that complement each other, so it's impossible not to love it. Loaded with vegetables, enriched with tuna, and topped with some aromatic Parmesan cheese, this stuffed tomatoes can make a nice (light) main meal with some bread, or a fancy side dish if you prefer it that way. Whichever option you choose, this is what you'll need to make 4 servings:

6. Bake into a preheated oven at 180°C for approx. 20 minutes, or until tomatoes become soft. However, be careful not to bake them for too long as they will fall apart eventually.
Serve them warm, with some of your favorite bread, if you wish.
Olives are also a great complement to this dish. |
