Tlacoyos are usually and most often made from blue cornmeal, and therefore have some dark blue - grayish color, but tlacoyos with "regular" yellow and white cornmeal are very common as well.
To be honest, I didn't knew there is a blue cornmeal until I found this recipe! :) Those tlacoyos were made from that blue meal (which is, by the way, blue because of the corn itself, there are no artificial colors added), and looked so attractive and unusual that I had to make them right away! But it turned out that I was not the only one who had never heard of that blue cornmeal. I couldn't find it in any store, so I made my tlacoyos with yellow cornmeal. I don't know how the blue ones taste, but these ones were just perfect! :)
Let's cook now! Prepare the following ingredients:

Directions:
1. Prepare the dough first. Combine cornmeal, salt and lard and knead adding water, a spoonfull at a time, until you get a smooth dough. You may need some more water, it depends on the flour. Divide it into 8 equal parts.
2. Cook the peas adding some salt and pepper. You can add some dried vegetables as well. Drain well and press with a fork. The peas don't have to be fully mashed. Divide the filling into 8 equal parts as well.
