- First of all, use a blender to turn tangerines into pulpy juice. Then melt the butter and set aside to cool a bit.
- Beat eggs and sugar with hand mixer until sugar melts completely, and the mixture becomes thick and triples its volume.
- Add mashed tangerines, then the butter while slowly mixing with a spoon, a spatula, or a whisk.

4. In a small separate bowl, combine flour, baking powder and coconut. If you've decided to make version 2, replace coconut with minced walnuts and grated chocolate. Gradually stir the mixture into the eggs using a whisk, until fully combined, with no lumps.
5. Pour the mixture into a lightly greased baking pan or muffin form. If you're using silicone bakeware, there's no need for greasing. |
7. Let the cake cool completely before cutting it into pieces, if any. If using silicone molds, wait just a couple of minutes before you take out the cake.
