As you can see in the photo, the cookies are made of yellow and brown part. Below, I have listed the ingredients for both parts separately. The recipe makes about 25 pieces.

- In a bowl, whisk one egg. Add one part oil and one part milk and stir.
- In a separate bowl, combine flour, semolina, yeast, and baking powder, one part of each.
4. Repeat the procedure once again with the other half of the ingredients to make the brown dough, but this time add cocoa powder when mixing the dry ingredients.
5. Divide each dough into 25-26 pieces. Shape the yellow dough into balls, and the brown one into small logs. There's no need to wait for the dough to rise - start shaping it right away.
6. Now, roll out each ball as shown below, put a log of brown dough on one side, and roll to "wrap" the log into the yellow part. See the photos below...
7. And here comes the fun part! Take a grater and pass each roll down the grater by gently pressing it. This way you will make the hedgehog spines. Use the fine grater for this. Check this video to see how to do it.
8. Arrange the rolls onto a baking pan covered with parchment paper and bake into a preheated oven at 200°C until golden brown. Let the cookies cool completely.
9. Once cookies have cooled, you can start preparing the syrup. Put sugar and water into a pot and heat it over high fire. After it comes to a boil, simmer it for 4-5 more minutes and remove from fire. 10. Arrange the cookies in some deep dish. Make sure they are in a single layer. I used a baking pan for this. Now, carefully pour the hot syrup into the pan with cookies. |

About half an hour later, turn over the cookies so they can absorb some syrup on the other side as well. You will see that after an hour or two in total, they will absorb the whole syrup.
When it comes to cakes and cookies that are being soaked in sugar syrup, the golden rule says "cold and hot" - one of them should be hot, and the other cold. It doesn't matter which one. If both are cooled, absorbing will take a lot more time and won't be that "successful". On the other hand, if both are hot, everything will fall apart and all that you will get is a mash. |
Store the cookies in a cold place, sealed in a box or covered with a foil to prevent from drying. They can stay fresh for up 4-5 days if stored properly.
