Today, we’re going to prepare Spaghetti Crudi, or one type of it, to be more precise. So, benvenuti in Italia!
Spaghetti crudi means raw spaghetti in Italian. The dish got this name as the spaghetti are actually being put raw in the pot and they’re being cooked in the same time with the sauce, rather than cooked first and then combined with the sauce or coated with it. Spaghetti crudi can be made with tomatoes, mushrooms, cheese, prosciutto... In fact, you can make this dish with any type of pasta, not only spaghetti.

Directions:
- First peel the tomatoes and cut them into slices. If they are ripe enough, they should peel without a hitch, but if they're not, you can always use the hot water hint. Divide tomatoes into 3 parts, almost equal (no need to be so precise).
- Take some wide pot and pour the oil inside. Arrange the first third of the tomatoes.
5. Cover the pot and put it over medium-heat. Once it has "boiled" reduce to lowest heat and let it cook, stirring occasionally until spaghetti are al dente. You can add some water (no more than 100ml) if tomatoes are too dry and you notice spaghetti are starting to stick to the bottom of the pot.
Note that you can add some sugar if tomatoes are too sour.
Once spaghetti are cooked, serve them right away, sprinkled with some more Parmesan cheese.
