As I wrote before in the Avocado Garlic Spread recipe, sometimes simplicity wins the battle as little can be just enough. The combination of avocado and garlic there is on the same level of perfection as tomato with basil here. Two simple ingredients in just the right quantity are more than sufficient. Besides, if you take into consideration the cost of fresh tomatoes and tomato sauce which are the main ingredient in this soup, you will see it's a very budget-friendly recipe.
The quantities given below make 8 servings, or even more if you prefer a thinner soup. So, let's start!

- Melt butter in a soup pot over low fire. Add flour and fry it for a couple of minutes, stirring often. When it starts getting golden-brown, stir in tomato sauce and chopped tomatoes. Stir well to get a homogeneous mixture.
- Now, gradually pour in water while stirring. Add bay leaves and let it simmer over low fire for 15-20 minutes.
Add as much water as you want the soup to be thick. I added nearly 2 liters and got a medium-thick soup. You should, however, remember that if you are making a really thick soup you'll need to stir it quite often to prevent from burning. - A couple of minutes before soup is done, add sugar, some salt and pepper to taste, oregano and basil. Cook for approx. 5 more minutes.
Serve warm, sprinkled with some more oregano and some grated yellow cheese, if you wish.
This is practically a basic recipe for Slovak Tomato Soup that you can adjust and upgrade to your taste. You can add some rosemary, marjoram or vegetable broth instead of (some quantity of) water. You can also enrich it with some tiny soup pasta or make it even more Slovak and add traditional Slovak halušky (type of dumplings). Feel free to experiment and get your perfect version of this recipe, the same way Slovaks do - 'cause there are so many versions, but they are all Paradajková polievka!
