You'll need the following ingredients:

- Cut peppers into small dices. Peel and finely chop tomatoes.
As for the peas, you can use fresh, frozen or canned, it doesn't really matter. - Melt butter in a pot over medium heat and add peppers. Cook them until half done. Add flour and paprika and stir constantly for 15-20 seconds so that paprika doesn't burn, and then stir in tomatoes. Also, add 7 cups of water and bring the mixture to a boil.
Also note that the soup will thicken after a while, as rice will absorb the liquid. If you need to reheat it, you can add some more water and let it come to boiling.
Serve warm, with some bread, if you wish.

3. Once it starts boiling, add rice and cook until it becomes soft. Then, add peas and mint and continue cooking for few more minutes until peas are softened. Don't forget to stir occasionally so that rice doesn't stick to the bottom!
4. At the end, season with some salt and pepper to taste and remove from fire. |
