I always make the rice pudding sweet and I must say that it's one of the favorite desserts in our home. I mean, it's served as a dessert, but I remember that my grandma used to eat this same sweet rice pudding as a main dish with some bread. So, why not? :)
It's maybe one of the first sweets I learned to make by my own, maybe even the first, I can't really remember... :) And this is how I prepare it..

These are the ingredients you'll need:

Directions:
1. Wash the rice well and drain it.
2. Bring the water to boiling and add rice. Cook over medium-heat stirring occasionally until rice becomes soft. At this point, water should be reduced by half and the mixture will be quite thick.
3. Add milk and let it boil without increasing the temperature. Cook for additional 3-4 minutes stirring occasionally and remove from fire. Add sugar to taste.
4. Serve warm or cold, as you prefer, sprinkled with some cinnamon, minced walnuts, coconut, grated chocolate... Anything you wish. Cinnamon and walnuts are my favorites.
There is a hint I always use when I need to cook rice without draining: the perfect ratio is 1:3 - 1 part of rice and 3 parts of water. You just can't miss! :)
Note that when you remove the dish from fire it'll be quite liquid, but as it cools rice will absorb the liquid and the pudding will become very thick.
Enjoy and bon appétit!
