And why did I called them Rainbow Candy Cookies? Simply because one of the main ingredients are the cute, small rainbow-colored choco candies, such as Smarties or M&M's.
They also contain chocolate, which is the number one dessert ingredient for many people, the one you just can't miss with. Besides, there is the ground flax seed which makes the cookies so soft and creamy. Its aroma and taste that remind of walnuts, make those cookies taste so familiar at the beginning, but yet so different after they start melting in your mouth. And not to mention the beneficial effects and the gains of the flax seed for your stomach and your body in general. So, in short, this is one of those recipes that gives you a delicious meal and a cure in one dish.
And this is what you'll need to prepare those yummy choco rainbow bars:

- 1 heaping tablespoon chocolate or hazelnut spread
- 100 g colorful chocolate candies (M&M's, Smarties, etc.)
- 150 g chocolate
- 3 tablespoons milk
- chocolate or color sprinkles
- Combine ground biscuits and ground flax seed in a bowl.
- Put milk, sugar, cocoa powder, butter, chocolate spread and crushed chocolate into a pot and cook over medium heat until everything melts and becomes a homogenized mixture. Pour the hot mixture into the bowl with flax seed and combine until homogenized.
- Let the mixture cool a bit, then stir in the colorful chocolate candies. You can set aside few candies for decoration. Remember to add the candies at the end so that they don't melt.
If you wish, you can melt 150 g of white chocolate with 2 tablespoons of oil and spread it over the mixture.
5. Put the dish into the fridge for 15-20 minutes or until the mixture thickens a bit and then cut into small bars.
