You'll need the following ingredients to make 4 servings:

- Slice the bacon and then dice it. Peel and grate the potatoes and set them aside for a couple of minutes to drain. Chop scallions.
- Heat the oil into a deep pan over medium fire and add bacon. Fry for a minute or two, until crispy, and add potatoes and scallions. Continue cooking for approx. 10 minutes, or until potatoes are done, stirring often so that they don't stick to the bottom of the pan. Add some salt and red pepper flakes to taste. You can use hot pepper flakes if you wish.
- Beat eggs well using a fork or a whisk. Add some salt. Once potatoes are cooked, pour beaten eggs into the pan and stir for a short time until they're done. Remove from fire.
Serve warm, with some bread and fresh salad of your choice.
