However, those pancakes looked pretty awesome and tasty, so I decided to try them.
I couldn't fail to notice that those resembled my Eggburger very much, though the ingredients were different. So, at the end I adjusted his recipe to mine and the result was just great! The new eggburger was so soft and fluffy, perfectly combining the unique savor of spinach (that many people find heavy) with a mysterious nutty flavor and refreshing cheesy bites... So hearty and yet so light and beneficial! And not to mention how quick it's done and how easily it can be made!
Popeye gets its strength from spinach... You can do it as well!
And this is what you'll need per serving:

- If you're using fresh spinach, blanch it or cook it until it wilts. Then chop it finely and measure 2 tablespoons (or as much as you need).
If you're using frozen spinach as I did this time, just defrost it. - Now, whisk the egg. Add flax seed and breadcrumbs, then spinach, and at the end stir in the cheese. Add some salt and pepper to taste. You'll get a thick mixture.
3. Put oil or butter into a frying pan and heat it over medium fire. Pour the spinach mixture into the pan and shape a patty by spreading the mixture with a spoon to approx. 1 cm thickness.
Cook for a few seconds, until the patty starts "moving" in the pan; i.e. is not sticked to the bottom any longer. Then flip it using a spatula and fry the other side for a few more seconds. |
