Directions:
- Dice or slice the carrot, as you prefer.
- Bring the water to boiling. Add some salt (approx.1 teaspoon) and the vegetables. Cook them covered, over medium fire, until tender.
- When veggies are done, carefully add polenta and stir energetically to combine. Continue cooking for 1-2 more minutes, stirring often, until you get a thick mush. Remove from fire.
Note that you can use other vegetables as well. Fresh or sautéed diced red or green bell peppers, or cooked cauliflower and broccoli will also look great. - Pour the mush into a suitable mold or a pan and smooth it using a wet spoon (to prevent sticking). There's no need for greasing the mold. Let it cool for a couple of minutes and take it out from the mold by turning it onto a plate. Cut into suitable pieces at your convenience.
You can also use some small, praline-like mold to get even more attractive shapes, but in this case you must work fast, before polenta thickens too much (it becomes thicker as it cools).
