As for many other dishes, there is a quick and a slow version of the recipe, depending on the ingredients you have. I will present both ways here, and you choose the one that suits you better.
Peppers are one of the most suitable vegetables for winter stocking. You can roast them, cook them, pickle them, sundry them, keep them wholes or chopped... There are hundreds of combinations! I would suggest that you make some roasted peppers for the winter and enjoy their recognizable aroma even a few months later when preparing this dish!
Here's what you'll need to make 2 main dish servings:
- 4-5 bell peppers OR 4 heaping tablespoons ajvar
- 2 eggs
- 1 tablespoon oil (optional)
- to taste salt

3. Meanwhile, whisk the eggs with a pinch of salt and stir them quickly into the cooked minced peppers. When eggs are done, remove the pan from fire.
4. If using ajvar, all you need to do is to whisk the eggs, then stir in ajvar and heat this mixture over medium fire until eggs are done. And that's all! You'll need a couple of minutes only! You won't even need any oil in this case, as some oil is already added in ajvar.
Serve right away.
If you choose to serve it as a main dish, some bread and white cheese will go excellent with it. And again, dipping the bread instead of using a fork is highly recommendable! ;)
As I mentioned above, this Pepper Mince Fry can also be a cool side dish for meat or a canapé spread. The choice is yours!
Note: I make this dish mainly with red peppers, but any other color is equally fine.
