This combo is one of my favorite stir-fries and one of my favorite dishes in general. It's hearty, inexpensive, very tasty, somehow creamy... and no time-consuming! Depending on the ingredients you use, this can be vegetarian or vegan dish. I personally, prefer the vegan version, though I'm not vegan, but you can make your own choice by adding or omitting only one of the ingredients.

Directions:
- Peel the potato, cut it in half lengthwise and slice it. You should get bite-sized pieces. Cut peppers into bigger dices.

2. Put oil into a deep pan and heat it over high fire. Add potatoes and cook them, stirring often. When they are half done, add the peppers, and some salt to taste and some pepper if you wish, and continue cooking until both potatoes and peppers are soft and tender.

Serve warm, with some bread and fresh salad.
