It's been more than a decade that I live a good way from my grandparents' house, and I really can't remember the last time I ate something from their garden. I've tried since pears from many other places, but none compares to those juicy bites I still remember most vividly.
There's one thing I'm sure of: this dessert will show you that juiciness!
Essentially, this is a recipe for crepes filling, as I used the basic crepe recipe I've already shared with you.
And what could I say about the filling to describe it to you before you prepare it and see it for yourself? Well, it's a perfect combination of sweet pears and delicious velvety caramel cream, a real explosion of flavors and aromas. It will take you only a couple of minutes to prepare it (considering you've already made the crepes), so it could be convenient for those occasions when you need some warm and fresh dessert for your guests without spending the whole time in the kitchen. Of course, you don't have to wait for some guests to enjoy it! :)
Here's what you'll need to make 4 servings:

- Half the pears, remove the seeds and slice them.
- Combine cornstarch with 200 ml of cold water.
- Put sugar in a pan and start heating it over medium fire. When it starts melting and getting yellowish color, shake the pan to avoid burning (and bitter taste later). You can also stir it if you want, but make sure to use a wooden spoon ONLY.
Once sugar has melted, pour in the remaining 200 ml of water and cook for a couple of minutes until caramelized sugar melts completely. Stir carefully to speed this up, again using a wooden spoon. - Now, add pear slices, sprinkle with cinnamon and cook for an additional minute.
Then take the pears out using a slotted spoon and stir in dissolved cornstarch into the pan. Cook stirring until it thickens and remove from fire.
You can decorate each crepe with some whipped cream or maybe some caramel topping, as you prefer.
