- 300 g dry pasta of your choice
- 600 g tomatoes OR 400 ml tomato sauce
- 250 g fresh spinach
- 100 g corn
- 5 scallions
- 50 g butter OR 3 tablespoons oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- to taste salt and pepper
- some sugar (if needed)
- Chop scallions and spinach. If using fresh tomatoes, peel and chop them finely or use a blender to make a mash.
- Bring some water to boiling, add some salt and cook the pasta al dente according to instructions found on the package. Drain and set aside.

3. Meanwhile, prepare the sauce. Melt the butter into a deep pot over medium fire (or heat the oil) and add scallions. Cook them shortly, just for a minute, and then add spinach. Continue cooking, stirring often, until spinach wilts. Then add tomatoes or tomato sauce and corn, and cook for a couple of minutes until corn is soft and sauce has thickened a bit. Before it's done, add the spices, some salt and pepper to taste, and some sugar if tomatoes are a bit sourish.

Serve warm, sprinkled with some grated cheese of your choice. I used some mayonnaise instead... (I'm using mayo with almost anything, remember? :) )
