Directions:
- Cut olives into round slices. Peel the tomatoes, remove the seeds and chop the flesh. Slice or grate the cheese.
- Combine olive oil and oregano and generously brush each slice of bread. You can also brush the slices with oil only, and then just sprinkle with oregano, as you prefer.
- Top with olive slices, then with cheese, and finish with tomatoes. Sprinkle with some salt to taste, and with some more oregano, if you wish.
- Bake into a preheated oven at 250°C for 5-6 minutes, until the edges of the bread start browning.
