Let's check the ingredients list now! You'll need:

1. First of all, prepare the peppers: roast and peel them, remove the seeds and pedicles, and cut each pepper lengthwise to "open" it. Set aside to cool before further use.
As I said, you can use peppers in any color. Also, if you like eating hot food, you can use some hot peppers instead.

2. Now, the filling. Separate egg whites from yolks.
Beat whites until stiff peaks form. Then, add cottage cheese and combine. Add some salt, if necessary. Set aside. If you want a stronger pie, you can substitute part of the cottage cheese with the same amount of grated Parmesan, feta, cheddar, Edam, Gouda... or some combination. Note that you should get a creamy and spreadable mixture, so add some sour cream or yogurt if the mixture is too dry and crumbly. |
4. Now, prepare the base for the pie. Lightly grease a 10 x 30 cm bread loaf pan and choose only one of the following two options...
Version 1 - filo pastry: Brush each filo sheet with 1 Tbsp of oil and sprinkle with 2 Tbsp semolina. Fold each sheet 3 or 4 times to make it fit in the pan. Put all four sheets in the pan, one on the top of the other.
5. Start assembling the pie: Cover the base with one layer of roasted peppers and sprinkle with 1 Tbsp semolina.
Then, spread the cheese filling. Cover with the remaining roasted peppers and sprinkle with the last tablespoon of semolina. At the end, spread the yolks filling, and top with grated yellow cheese.
Let it cool a bit before cutting. Serve lukewarm or completely cooled, plain or with some fresh salad.
