And today on the menu: jaffa cakes! You know those sweet three-layered cookies with soft sponge base and fruit jelly covered with chocolate? Yes, I'm sure you do! :) Well, in this post I will show you how to transform those jaffa cakes into these delicious jaffa truffles!
I saw this recipe on a famous TV cooking show, where viewers could send their own recipes. The best ones are chosen to be prepared in the show by a professional cook and shown on television, while the credits and a certain material reward were given to the recipe creator. Without any further delay, let me share with you the recipe for those fantastic jaffa truffles... You'll need the following 3 ingredients only:
- 250 g jaffa cakes
- 250 ml whipping cream
- 5 tablespoons ground biscuits
Directions:
1. Chop jaffa cakes. It will be easier to do this if you put them in the fridge for a few minutes first.

2. Whip the cream using a hand mixer until stiff peaks form. Add chopped jaffa and ground biscuits and combine. You need to get a mixture which is not sticky and can be easily shaped into truffles, so add some more ground biscuits if necessary.
In this recipe, you can use any type of biscuits: butter cookies, petit beurre, shortbread cookies... 3. Form truffles in whichever size you wish and roll them into ground biscuits or finely grated chocolate. |
