This combination of sweet-and-hot applesauce and ice-cold yogurt topping, complemented with creamy rice, makes a complete, light meal with a flavor to remember.
And this is what you'll need to make 4 servings:

- Cut onions into halves and then slice them. Peel and slice the apples.
- Put butter and oil into a deep pan and melt it over medium fire. Add onions and a pinch of salt and fry until soft and translucent.
- Then, stir in apples and sugar and cook for a couple of minutes until sugar caramelizes. Pour 500ml of water and simmer over low fire until the mixture becomes thick and all the liquid vaporizes. Add parsley, doctor with some more salt and pepper and add some red pepper flakes to taste. You can use mild or hot, as you wish, though I would recommend hot for a real boost of flavors!
- Meanwhile, cook rice according to package, using no other seasonings but salt. Drain it.
- Now, it's time to shape the volcano, though this is an optional step.
Use a cup or a small kugelhopf mold to shape a pile of rice, making a hole in the middle, that is the volcano "rupture". Fill it with chilled yogurt. Ring the rice pile with hot apple-onion mixture.
Of course, you can simply divide the rice between servings and top each one with the apple mixture and with some yogurt, or serve the yogurt separately.
Serve warm, with some more yogurt aside.
