In this post I'm going to present you the Gingerbread Cookies recipe I discovered recently, as we all liked it very much. The cookies were so heavenly aromatic and delicious, and the preparation so simple, that I will just have to triple the dose the next time I'll be making them! The dough is so easy to handle, that anyone will succeed in making the cookies! :)
As you can see from the photos, I didn't make the "traditional" version of man-shaped cookies decorated with royal icing, and for two simple reasons: I don't have (yet) the man cookie cutter, and I still haven't found a suitable icing recipe.. :) However, my main intention was to find out what's the flavor of the cookies like, so decoration wasn't necessary in this case.
And those are the ingredients I used:

...And this is how you can make them:
- In a bowl, combine flour, sugar, salt, spices, baking soda and baking powder. Add sliced butter and knead until butter incorporates and you get a grainy mixture.
- Whisk the egg and stir it into the flour mixture. Also add honey and continue kneading until you get a smooth and non-sticky dough.
You may need to add a tablespoon or two of flour more, it all depends on the type of the flour. On the other hand, if dough is too hard, add a tablespoon or two of cold water. - Wrap the dough into a plastic foil and put it into the fridge for 5-10 minutes.
- Lightly sprinkle the work surface with some flour and roll the dough to a 3-4 mm thickness. Cut as many pieces as you can using your favorite cookie cutters. Arrange the cookies onto a baking pan covered with some parchment paper, leaving some space between them (1-2 cm).
Reknead the remaining dough, roll it again and cut more cookies. Repeat this procedure as many times as needed until you spend all of the dough.
Remember that if the dough warms up too much and becomes sticky, you can always put it into the fridge for a few minutes.
This will give you cookies the softness from the inside. But if you prefer crispy cookies, let them bake a bit longer, for 7-8 minutes.
