As I was adding the ingredients and watching them combine, I thought they reminded me of some gemstones hidden in the rocks: some beetroot as tiny shiny red rubies, and some walnuts as the always appreciated and valuable gold. I usually get stuck whenever I have to come up with a name for a dish, but this time it was easy - it was Gemstone Couscous!
It is definitely worth mentioning that you'll need no more that 20 minutes to prepare this dish. The "sauce" will be done while couscous soaks the liquid, and you'll have your dinner ready in no time!
So, this is what you'll need to make 2 servings:

- Prepare couscous according to package instructions, adding no other seasonings or spices but 1/2 teaspoon of salt. Set aside until further use.
- Meanwhile, put oil in a deep pan and heat it over medium fire. Add diced beetroot, caraway seeds and some salt and pepper to taste. Cook for approx. 10 minutes, or until beetroot is soft and tender, stirring often.
This dish can be easily shaped, so you can use some molds to give it a fancy touch.
