For me, this is one of the meals that remind me of my grandmother. Whenever we (her grandchildren) would ask her to make some fries for us, she would make this omelette for her. At first, I was wondering how could she prefer fries omelette to "regular" fries? I mean, how can someone choose anything else over the crispy little bites? But that was just a child's thinking... :)
Grandma would always offer us to take some of her meal, but we would always say "no, thanks!" It looked a bit unattractive, at least to me. But I was veeeery picky child when it comes to food! :)
One day I decided to give it a whirl. I took a bite dubiously, and then bang! I understood why she was "refusing" the crispy fries the very same moment! She had their crispiness here as well, but wrapped into creamy eggs, and it was way better!
And you can guess what happened afterwards. Anytime I would ask her for some fries, she would say "With eggs?"... "Yes, please!"
Later, when I grew up enough to cook by myself, I went for fries omelet instead of regular fries whenever it was possible. I was very happy when I got my husband to try this meal for the first time and see his thrill, especially because it was the first time he tasted it, and the first time he has ever heard of it.
However, I was extremely surprised to learn that this very same dish exists in Tanzania, known as chipsi mayai, which stands for "fries and eggs" in Swahili. What is more, it is considered to be a national dish and a staple! I mean, I wasn't really expecting that my grandma made it up, but the fact that she used to prepare a meal originating from a country she had probably never heard of and which is thousands of miles far from her home, it's just stunning!
As I mentioned, the preparation is very simple, and you'll need just a couple of ingredients, so let's see how to prepare it! You'll need per serving:

- Whisk the egg and add salt and pepper to taste.
- Peel the potato and cut into sticks, as thick as you like them. Fry them as you usually do.
Of course, you can use some store-bought French fries.
Take them out using a slotted spoon and transfer into another pan, or simply discard the oil from frying and leave no more than 1 tablespoon of it. - Pour egg evenly over the fries in the pan and cook for a couple of minutes, until golden brown on the bottom. Then flip it using a plate or a slotted spoon and cook for additional few seconds.
You can also prepare it a bit different: once you add the eggs into the pan, stir as if you are making scrambled eggs. You'll get some kind of fries stir-fry or scrambled eggs enriched with fries, if you prefer to call it that way. This is especially convenient if you need to make several servings at once.

Well, to be honest, milk isn't always sheep and bread isn't always homemade nowadays, but it's still the most tasteful when served like this, for sure!
