This salad can be served as an appetizer, but due to its creamy and smooth texture, it can also be a wonderful sandwich filling. Whichever way you choose, I would suggest you to be moderate in consuming it, as it has a really strong taste. That's way it's usually served in small dip-like dishes, rather than in standard salad bowls.

Directions:
- Peel and grate the eggs, or you can crush them with a fork.
- Finely chop the leek (white and light green part only) or the scallions (with the green parts). Note that leeks will give the salad a stronger taste, so if you prefer it a bit milder, use some scallions instead.
- In a bowl, combine eggs, leeks, mayo, and mustard. Then doctor it with some salt to taste and some more pepper. This salad should be really peppered. Also, add some lemon juice, if desired. I didn't put any.

Serve chilled, with some bread (preferably toasted), puff pastry or this amazing rolled bread.
