I shared the recipe with many of my friends and family members and they all had pretty much the same reaction: starting from "no way this is good!" to "OMG, this is so good!" :) I'm sharing it with you now, and I hope you'll enjoy it as much as we all did!

- In a bowl, combine flour, semolina, baking powder and 1 cup of sugar. Divide this mixture into three equal parts.
You are basically making a classic cake mix you would buy in a store, except for two things: this one is much cheaper, and you won't add any liquid in it to make a cake batter. - Grate the apples and put them in a bowl, altogether with the juice they have released. Add the remaining 1/2 cup of sugar, some cinnamon to taste and vanilla sugar or extract, if you wish. Depending on the apples you're using and your taste, you may need to add more or less sugar.
Note that the apples should be quite succulent. If you're using some that are a bit dry, make sure you increase the quantity to 1,5 kilos.
Divide the apples mix into two equal parts. - Now, use some of the butter to grease the baking pan. The one I used is 23x23cm.
- Let's now assemble the cake! Put 1/3 of the flour mix you made in step 1 into the pan and shake to spread it evenly. Cover with half of the apples. Use a spoon or a spatula to level it.
Now put the second third of the flour mix and shake again to spread it. Press with your hands to "tie" it with the apples beneath. Now, the repeat the procedure with the remaining apples and finish with the last third of the flour mix.
This is how it should look like
Take the cake out from the oven, cover with a kitchen towel and let it cool completely before serving. Then cut it into pieces at your convenience and sprinkle each piece with some powdered sugar and/or cinnamon.
