This apple pie is perfectly complemented by the sweet fresh carrots and if that's not enough, I've added some nice spices to give it even more beautiful fragrance, if possible. It is a real joy for all your senses!
I have to say that its preparation is not time-consuming at all, even though it looks like so, and the final result will be a nice and pleasant, light dessert that will bring the aroma of grandma's kitchen.
This time, I shaped the pie into triangles, but you can make a simple roulade and cut it into serving-sized pieces after baking.
And this is what you will need to make 15-20 pieces:

- First, prepare what is going to be the glaze. Whisk the egg, then add sour cream and water and whisk again until homogenized. At the end, stir in baking powder and set aside.
- In a separate bowl, prepare the filling. Combine grated apples and carrots, semolina, cinnamon and some sugar to taste. You shall decide the quantity of sugar you're going to use depending on the sweetness of apples and carrots. This time I used semi-tart apples, put 2 tablespoons of sugar and got a medium-sweet pie.
- Now when you've prepared both the filling and the glaze, you can start assembling the pie.
If you want to make triangles as shown on the photo above, cut each filo sheet into half widthwise. Then, brush each half with the glaze and fold into half widthwise again. Sprinkle with some filling and fold the sheet as shown in step 5 in this post here.
If you've decided for a simple roulade, all you need to do is to brush 1 filo sheet with the glaze, then cover it with another filo sheet and sprinkle some filling as shown here and roll it.
- Arrange the triangles/roulades onto a baking tray or pan covered with some parchment paper, brush them lightly with the glaze and bake into a preheated oven at 200°C for approx. 25 minutes, or until golden brown.
